It’s Beginning to Feel a Lot Like Summer…

June 21st marked the start of summer 2020! We here at Conscious Kitchen are excited for the wonderfully warm weather and, of course, the brilliant produce that grows with all the extra sunshine! Already we are seeing bountiful harvests of strawberries and basil, which we love to use in this FLOSN inspired strawberry basil agua fresca to keep us cool and refreshed on those toasty summer days!

STRAWBERRY BASIL AGUA FRESCA

serves 4

Ingredients

  • 2 quarts strawberries, rinsed and cut
  • 2 Tablespoons local raw honey
  • ½ cup plus 2 Tablespoons freshly squeezed lemon juice
  • 1 quart freshly squeezed orange juice
  • ½ cup loosely packed basil, crushed plus more for garnish

Directions

In a pot, combine strawberries, honey, and 2 Tablespoons lemon juice. Cook on low heat to soften, about seven minutes. When berries are soft and macerated, place mixture through a strainer to separate out the juice. Cool strawberry juice over ice, and add the orange juice and remaining lemon juice. Adjust flavor. Add crushed basil leaves, chill, and serve over ice. Garnish with basil.
